Animale Cabernet Sauvignon 05: Animale winemaker Matt Gubitosa makes wines that express the varietal character of the fruit. He's not into lots of toast, or lots of extraction, and sometimes his wines seem quite different from other WA wines from the same varietal.

Animale's Cabernet Sauvignon has a classic nose of black cherry, with hints of pomegranate and plum. Flavors are clean and clear, refreshingly free of oak and toast. This is not a hearty bomb of a Cab but a sophisticated, clean and fresh flavored wine. While full-bodied, it is not soft or viscous. It reminds one of Cabernet made for local consumption in Bordeaux, the kind you go buy with your own gallon glass cider bottle, filled with a spigot from a big neutral oak barrel in the barn of a local winery. Very different, great balance of refrehsing acidity and subtle fruit flavors, very European.
