Review: John Paul never does anything ordinary, and the Ramato is anything but. His take on Oregon Pinot gris is inspired by a wine from the Veneto region of Italy called Ramato. The Italian word ramato means "coppery colored," or "coppered" and refers to from the color of the wine. By leaving the grape skins in the grape juice while fermenting, the wine takes on the beautiful copper color. John Paul varied his methods a bit, and the wine is not as dark as the Italian version. He didn't leave the skins in the juice for as long as the Italians do and the wine has just a hint of copper color. Additionally, the wine has taken on spice and citrus peel flavors not usually associated with gris. The 2011 Ramato has a rich texture of shot silk with scents and flavors of Washington pears and peaches, citrus peel, slate, mineral water and a pleasing, subtle hint of bitter dark beer in the finish (!!)
