The winery says: "Our Yakima Valley Merlot shows off the best attributes of the appellation's grapes. The growing season of 1997 resulted in a classic balance of varietal character, flavor, body and acidity. We continue to process grapes in an extremely gentle way; using gravity for transferring grape must to the fermenter and to the press. Individual fermenters are no greater than one ton in capacity, and the "cap" of skins is manipulated by hand to extract color and flavor components.
Chinook Merlot is aged for 2 1/2 years in oak cooperage to smooth the texture and flavors of the wine. 9% Cab Franc and 15% Cabernet Sauvignon finish the blend. We particularly enjoy serving Merlot at outdoor summer barbeques with local lamb and produce in season. 728 cases bottled.
