Cubanisimo's name was inspired by founder Mauricio Collada's Cuban heritage. Inspired by friends who introduced him to Oregon winemaking, Collada purchased 21 acres of vineyard land in 1991. Located near Salem, eight acres of the vineyard were planted in 2003 to Pommard clone Pinot noir. Several acres were also planted in 2003 to Dijon clone Pinot noir.

For the first few years after planting, fruit was sold to neighbor wineries Evesham Wood and Erath. The first vintage of Cubanisimo Pinot noir was made in 2003, and about 1000 cases a year are now produced.
