Et Fille Pinot noir Seven Springs 04: Restrained nose with pure fruit scents, red raspberry and rose petal dominant. A subtle undercurrent of toast and spice shows under the fruit scents. From first contact, the wine says "classic". Flavors start with rich, pure blackberry, soft blueberry notes, hints of sweet rose petal and violet, and a tiny touch of cola, cinnamon, and sweet plum. The finish is super smooth and silky, with tannins showing a tad more than acids, but the balance and pure fruit expression say "cellar me". This wine, with 5-8 years of cellaring, will be a first class representation of the best elements of Oregon Pinot noir. The complexity increases with aeration and hints at the complexity that is present when a well made, well balanced Pinot noir is allowed to reach its zenith.

The Seven Springs Vineyard, also in the Eola Hills,, has long been recognized as one of Oregon's premier vineyards. Food and Wine recently included it as the only Oregon vineyard in its Ten Best Vineyards list and called it "a benchmark for Oregon Pinot Noir."
In its review of our 2003 Seven Springs, the Wine Spectator called it, "silky and lovely, with pretty raspberry and strawberry character at the center, picking up touches of earth, spice and sandalwood as it glides smoothly through the finish (90)."
2004 will be our last offering of the Seven Springs Vineyard as phylloxera damage spread in the vineyard, causing permanent disease damage. The 2004 is a high note on which to conclude our Seven Springs Vineyard releases, as we are pleased with the consistent elegant character of our 2004.
Dad: Floral/coffee aroma. Bright, complex taste of cherries, stone fruit. Very long finish.
Fille: Our 2004 Seven Springs is once again graceful and refined, bringing to mind a night at the symphony in a black spaghetti-strapped evening gown. It has a ruby color and a complex nose of rose and plum that are accented by a hint of earthy tobacco. The balanced flavors begin with rose and violet but, with time, are highlighted by coffee and cola. The velvety mouthfeel would best be enjoyed when you have the time to appreciate its dynamic complexity while lingering over a fine dinner. This is a wine that would best be held for years and memories to come.
