The nose is playful, with red berries, black cherry candy and caramel. Then POW! Fielding Hills Cabs capture the essence of Cabernet, with a dense cassis core accented by sweet black cherry. Great structure and balance. The caressing finish echoes with dried herb, licorice, earth, and generous black fruit.
Paul Gregutt's Top 100 Washington wines for 2006 included the Fielding Hills Cabernet Sauvignon 04 at the NUMBER THREE SPOT. The only wines ranked higher were from Quilceda Creek and Cayuse.

2005 Vintage Tasting Notes
The Fielding Hills Cabernet Sauvignon 05 is an opaque ruby color, with a restrained nose, and full, rounded flavors. Cabernet can show a multiplicity of robust and delicate qualities, -- this Cab is a good example. Fruit flavors range from black and red cherry to pomegranate, currant, plum, nectarine, and raspberry jam. Intricate suggestions of slate, licorice, tar, white pepper, and herbs linger on a long finish. annins are positively velvetty, with just the right level of acidity to allow for cellaring and serving with food. 2004 Vintage 95 points, Wine Enthusiast 11-06 -- A blend of 76% Cabernet Sauvignon, 5% Merlot, 18% Syrah, & 1% Cabernet Franc, all from Fielding's Estate vineyard, Riverbend Vineyard. Aged 19 months in a combination of American and French barrels, 76% new oak. 366 cases made.
