Inniskillin Ice WinesInniskillin is one of the top Canadian wineries, known for its Ice Wines. It only gets cold enough in a few places in the Pacific Northwest to make true ice wine, where it hangs on the vine until January to pick. That hasn’t stopped a plethora of winemakers from experimenting with both freezing grapes and freezing juice. But Inniskillin uses the "true" ice wine methods, leaving the grapes on the vines into the winter, finally picking before dawn of the first freeze. The rock solid marble grapes are pressed quickly - each grape produces a tiny amount of the nectar that becomes an Inniskillin wine. |
