Bright fresh apricot is big on the nose and follows through the palette picking up pleasant traces of minerality and bright green apples. Slight traces of bitter citrus peel, lemon and orange, are racy and bright. Crisp and refreshing, this is a chardonnay made with no oak and no malolactic fermentation so it retains the true nature of the grape. This wine would be great with lighter dishes like a simple white fish pan grilled or poached, or an apple and chicken salad served over greens. The Cuvee Lunatique Chardonnay is made in all stainless steel with no malolactic fermentation, yielding a crisp, refreshing wine, perfect with lighter foods. Jay Somers first worked making wine with John Paul, winemaker and owner of tiny cult winery Cameron. In 1999, after three vintages at Cameron, he partnered with Bill Holloran, a software executive with a love of wine, and they built a small winery on Holloran's farm. In return for making Holloran's Holloran Winery and Stafford Hill label wines, Jay uses the facility to make his own J Christopher label. Jay tries to work with organic vineyards as much as possible.
