Jaden Pinot noir Ice Wine 375ml
The signature of Jaden Pinot noir Ice Wine is the balancing tension between the sweetness and acidity, allowing the wine to finish with a crisp, clean and refreshing mouthfeel.
Producing Jaden is tedious, time-consuming and rewarding. Each year, a small block of Pinot Noir is left to take a natural approach as the grapes become frozen on the vine. During the late fall, the vines are netted to protect the clusters while they hang from the vines throughout the winter. The nets protect the fruit from trespassers known as birds, bears and other wildlife during the dehydration process. The water freezes under the skin and allows the grapes to naturally solidify on the vine. The levels of ripeness change quickly, due to the fluctuations in temperature between freezing and thawing. This process concentrates the sugar, acids and extracts in the fruit, which creates intense aromas, flavors and complexity - allowing it to finish crisp and clean and not overly sweet. During the winter months temperatures in the Okanagan Valley are known to drop excessively to -8C, a minimum chill that is required for natural Icewine that shocks the clusters, allowing them to naturally freeze on the vine. During this process, the water in the grape turns to ice while the sugars and acid remain to create syrup like liquid. "The frozen clusters are harvested before sunrise and are pressed immediately," James stated. "After the pressing occurs, the frozen ice crystals separate from the syrup and the fermentation of the intense liquid begins. The aroma and flavor of the fruit are so intense and delicious - it immediately makes up for the long anticipated wait."
