Ripe tropical fruits suggest pineapple and Meyer lemons in the nose. The Dijon clone body is buff, but not brawny. The cool weather growing conditions make it more white Burgundy than Napa in style. A light mineral structure adds complexity. Good acid balance lends to glorious food pairings-think scallops with light cream and tarragon sauce.
