Its nose is dominated by sweet, wild, almost brambly fruits, and has significant hints of pumpkin pie spice, white pepper, and wild mushrooms. Initially the layered dark red flavors dominate, then spices and complex focused flavors follow into its long finish. This is wine for game and wild mushrooms - those wild and earthy flavors in the food bring out all the layers in this wine.
Wine Advocate (Parker) rating 91 for 2000 vintage: "The restrained 2000 Seven Springs needs air to reveal itself. Perfume, black raspberries, violets, and cherries gradually unfold in its delightful nose. Medium to full-bodied, it has admirable concentration, depth, and refinement. Brambleberries, black cherries, and flowers dominate its flavor profile and extensive finish. Projected maturity: 2005-2012." - Pierre Rovani
Wine Advocate Rating for 99 vintage was 93 Points"Aromatically, the medium to dark ruby-colored 1999 Pinot Noir Seven Springs displays wild flower, berry, cinnamon, and a myriad of spices. It is rich, juicy, and extremely elegant. Loads of candied red fruits, mostly raspberries and cherries, are found in this ample, structured wine. It is fresh, bright, beautifully concentrated, and has a long, toasted oak and cherry-flavored finish. Projected maturity: 2005-2014."
This is the benchmark wine for St. Innocent. Multiple layers of wild black and red fruit, complex pie spice, white and black pepper and, with some age, truffles and farm aromas. Always at its best after 10-12 years. As with the other wines of 2000, the terroir is very transparent.
After this vintage, the upper and lower blocks will be made as separate vineyard designations. The upper will be called Seven Springs and the lower, Anden Vineyard.
