Best served with dessert, the 1997 Late Harvest Botrytized Semillon is an excellent match for fruit based
desserts such as cobblers and tortes. The hazelnut flavors from the botrytis are accentuated with desserts that contain nuts. Botrytis is a fungus that occurs naturally in many vineyards throughout the world. It causes the grapes to dehydrate, concentrating the sugars and flavors at harvest and imparting honey and nutty flavors to the affected grapes. Development of botrytis in the vineyard requires a delicate balance of warm temperatures and high humidity as the grapes are ripening, a combination that is not very common in the dry Eastern Washington climate. The grapes destined for our Late Harvest Botrytized Semillon were cultivated in a manner that encouraged the formation of botrytis, then only clusters that were 100% botrytis affected were hand-harvested for this wine.
VINEYARD
1997 was cooler than average in Washington State; fortunately, the late spring and summer months were warm and dry. The extended fall was warm through late November, allowing the botrytis progress in the vineyard.
WINEMAKING
Stainless steel tank fermentation at closely monitored temperatures allows the preservation of fruit flavors in the finished wine.
