Waters Cabernet Sauvignon Walla Walla 04: Vibrant dark garnet color with an expressive nose full of cherry cola, tea leaves, cinnamon, black plums, anise and vanilla. On the palate, big black stone fruits and chocolate espresso beans dominate, with a touch of liqueur-like intensity. While the fruit is present, it is not made in the "fruit bomb" style of many U.S. cabs. The wine is structurally balanced with fine ripe tannins, good acids and a long finish.
The wine is made of blended lots from PepperBridge and Spofford Station vineyards, both located on the flats at the base of the Blue Mountain foothills. The 2003 growing season was generally considered a hot one, yet the location of these two vineyards in the Cottonwood Glen area made them "cooler" sites. This enabled us to keep the cropping level low (yields less than 3- ton per acre), and we didn't pick these grapes until October, which gave them a long "hang time" while retaining natural acidity.
