Lime, grapefruit zest and pear aromas precede a spicy oak note and a nice, round texture. The bright acidity of this cool vintage gives the wine an appealing crispness and long, fresh aftertaste.

94% Sauvignon Blanc, 6% Semillon

The 2000 vintage was one of the coolest growing seasons in the past 20 years. The cool weather allowed for extended hang time and development of especially vibrant fruit aromas and flavors. To protect this intensity, grapes were harvested at night when vineyard temperatures were coldest.

Each lot of Sauvignon Blanc grapes was handled individually throughout the winemaking process. After inoculation with Premier Cuvee yeast, the wine fermented for 14 days in new and one-year-old French oak. To add complexity and structure, it was aged sur lie for four months.
