Kestrel Two Ton Cabernet Sauvignon

Kestrel Two Ton Cabernet Sauvignon gets its name from an experiment in vineyard management. Different blocks of the Kestrel View Vineyard were divided into three parts - one part was thinned to two tons per acre, one to three tons per acre, and one to four tons per acres. The two ton produced the best wine and the experiment has been repeated with the remaining parts of the vineyard. The resulting wine is dark plum red in color, almost black in the cneter. Flavors include dark fruits and spices, particularly nutmeg, clove, cardamom and even cocoa. Only 280 cases produced.
