GOATS CHEESE CAKE

11 oz. goat's cheese
¼ cup granulated sugar
1 tsp. vanilla extract
1 tsp. fresh lemon zest
1 tsp. of fresh lemon juice
6 large eggs, separated
3 tbsp. all purpose flour

Preheat oven to 350°. Combine all ingredients but eggs and flour. Mix well, and then add eggs two at a time. Stir in flour. Beat egg whites until they form soft peaks. Gently fold into cheese batter. Pour into well-buttered 9- inch round baking pan. Bake 25-30 minutes or until wooden skewer comes out clean. Invert onto large plate and cool. A nice accompaniment is fresh berries.
