Seven Hills Cabernet Sauvignon Walla Walla 04

Winery: Seven Hills

Classy, refined Cab fron one of Washington's most experienced winemakers. Casey continues to offer some of the best wines in Walla Walla, at prices that have not changed much in ten years.

Scents of red fruit and softly spicy oak are complemented by flavors of sweet red fruits, blackberries, and black cherry. A well made medium bodied wine with nice uplifting acidity, finegrained, totally integrated tannins, and an interesting finish with hints of pie cherry and cinnamon. Super food wine, serve with rack of lamb or pork roast.

Only 400 cases made, will go quickly (6-07).

MORE INFORMATION

Wine Spectator says of 2000 vintage: "Plump and smooth, generous with its berry and currant flavors. Focuses nicely and echoes harmoniously with hints of mocha and white pepper. Drink now through 2006. 550 cases made." (HS)

Grapes: Hand-picked from the oldest vineyard blocks under good weather conditions. Vintage weather was unusual, but led to near perfect balance in the grapes. A small portion of Merlot and Cabernet Franc was included for complexity and softness.

Sensory: An elegant, layered Cabernet showing the depth of flavor that old vines give. Broad, rich black fruits and herbs are accented by cocoa and spice oak notes. Harmonious acidity and structure support the sensory profile.

Wine Enthusiast, "Editors Choice" : "This flagship effort comes from the oldest blocks in this pioneering Walla Walla vineyard, planted some two decades ago. Elegant and layered, there are nice notes of licorice coming through a core of deep, fragrant black cherry fruit., Some nice cocoa accents and a hint of mint add interest as well." Score: 91

Wine and Spirits Magazine, June 2002 Issue (on sale May 7) "A red as deep as India ink, this fragrant cabernet fills the mouth with ripe fruit, then lasts with scents of thyme, green herbs and anise. The black fruit is blunt and sweet for now but it should evolve well over the next five years when it will be ready for Provencal lamb with olives." Score 90

Wine Spectator Magazine, "Plump and smooth, generous with its berry and currant flavors. Focuses nicely and echoes harmoniously with hints of mocha and white pepper. Drink now through 2006." Score: 90

Cellar Notes: Bottled in late July 2001 after aging in our cellars for 23 months in a mix of French and Russian barrels. Will benefit from medium to long-term cellaring, gaining additional integration and flavor development over 18-36 months. Historically these wines age well for a decade or longer. A very collectable bottling from one of the most famous Northwest vineyards.
