We were blown away when we tasted the first test bottle of 1999 Brut. The nose had delicate aromas of ripe apple, nuts, and toast. It was the flavors and finish that were the most amazing. Delicate floral fruit and cocoa flavors intermingled with a beautiful fine texture of its mousse and persisted into a very long nuanced finish. Potentially our best ever.

Oregon's cool climate is well suited to the grapes used to produce sparkling wine. Pinot noir and Chardonnay grapes ripen slowly without losing their natural acidity. The wines produced have a balance of flavors and a richness that is enhanced by estended lees aging.

The methode champenoise is a technique developed by French monks and refined by the great French Champagne houses. The sparkle or mousse is created by a second fermentation in this bottle. The wine is then aged for three years to develop flavors and aromas typical vintage sparkling wine before being disgorged.

The 1999 Brut is made with 80% Pinot noir and 20% Chardonnay grapes. The dosage is 0.5% sugar.

Ann and Carl, Avalon's store managers, have this to say about the Abeja Cabernet Sauvignon: "The Abeja Cabernet Sauvignon has the aromas of a fire burning out in a hay field getting ready for marshmallows followed by juicy cherry notes. The flavors are rich with blackberries, dark chocolate, leather, smoke and spice.

The finish is long with a cinnamon vanilla touch on the end. I had this wine with Wild Chinook Salmon and it held up beautifully to the Salmon. This wine complemented the fish perfectly. Simply a delicious Cabernet from Washington. Don't pass this one up!!

Fielding Hills Cabernet Sauvignon 01 $29.99
The Cabernet Sauvignon 01 shows more terroir and structure than the 00, as the grapes mature, and has even more of that wonderful ripe, rich, dense complex palette of flavors than the 00. It is quite closed, and will reward the patient with both interwoven black and red fruit flavors and with a backbone of well structured tannins and intense toasted cocoa and espresso bean notes that are characteristic of all the Fielding Hills wines.
